Diane is the owner of Cake Connection, and has been decorating cakes since 1992. She has won several awards at various competitions throughout the US, and has had several cakes published in various magazines around the world. Diane has developed an entire product line for a new technique she developed creating gelatin flowers, and now travels around the nation teaching a variety of classes. She has also written two books on her gelatin techniques.
We are not currently scheduling classes on a regular basis…. however, if you have a group of at least 4 or more who would like to take a class, we would be happy to teach you! Just call or email and we will work with your schedule to arrange the class for your group.
Cake Bites/Balls/Pops: During this class, students will learn to make cake balls (the real way! ) and also learn to add sticks to make them a cake pop. We focus more on showing proper consistency of dough, flavor combinations, and dipping techniques. We do not get into making any of the fancy character cake pops/balls. You WILL have a good understanding of the techniques to go out and do those after class… they just take a lot more time with all the tiny details so our preference is that you know how to make a wide variety of tasty cake balls that looks nice… the creativity is up to you.
Cookie Decorating: Learn a variety of techniques to create stunning looking cookies for friends, family, and customers. During class, students will learn to decorate cookies with fondant icing, royal icing flooding (run-sugar), edible images, stencilling on cookies.
Cupcake Creations: It’s time to join the craze and make some cupcakes! Students will learn to fill the cupcakes, and then do a variety of topping styles. We will work with both buttercream and rolled fondant, doing piping, stencilling, and figure modeling.
Fun Fondant Accents: Have you ever wondered how to get those perfect looking stripes on the sides of cakes… or add zebra print… or make the fondant drapes and bows??? Now you can learn to add all these beautiful (and EASY!) accents to your buttercream (or fondant) cakes. During this class, students will work with rolled fondant and learn: striping and polka dots, quick fondant flowers, using silicone molds (to make lace, flowers, and more!), draping, how to make a package bow (demo only – time doesn’t allow for students to make this), best ways to attach fondant to buttercream (so it stays put!)
Fun with Isomalt: What is isomalt you ask… well, simply put, it is a sugar substitute that is less sensative to humidity than sugar. It is commonly used in diabetic candies, and is preferred for making sugar display pieces as it doesn’t melt into a puddle like sugar will when the weather turns humid. We have taken the stress out of working with sugar and isomalt! Now you can make quick and easy sugar art pieces without all the expensive equipment and worry about burning your fingertips. During this class, students will work with isomalt and silicone molds to create a flower and greenery along with some filler flowers and a butterfly.
Gelatin Bow: See just how fun and easy it is to create these beautiful glasslike bows and butterflies using gelatin, water and food color. Diane is actually the creator of this method, and she also designed the veining sheets used to make them. During this class, students will learn to prepare the gelatin, brush onto texture sheets and then create their own fancy package bow adorned with a glitzy butterfly. Your friends, family, and customers will be wowed with what you’ve created… and only you will know just how easy it was!
Gelatin Flowers: See just how fun and easy it is to create these beautiful glasslike flowers using gelatin, water and food color. Diane is actually the creator of this method, and she also designed the veining sheets used to make them. During this class, students will learn to prepare the gelatin, brush the petals on sheets and then create their own lily with greenery. Following the flowers, we will make a glitzy butterfly to rest atop a petal. Your friends, family, and customers will be wowed with what you’ve created… and only you will know just how easy it was!
Gumpaste Flowers: Let your creative juices flow as you see just how fun it is to create these beautiful sugarpaste flowers. Diane has studied under some of the best gumpaste artists in the world and has since won numerous awards at national competitions for cakes featuring her flowers. Note – this is a TWO NIGHT class. Students will create an arrangement including a rose, rose bud, leaves, and filler flowers.
Intro to Rolled Fondant: Have you ever wondered how to get those perfect looking fondant cakes??? Now you can learn to use fondant to get that smooth and porcelain like look on your cakes. During this class, students will learn how to cover the cake with fondant and also how to prevent tears and work out the bulges, pleating, and other common problems.
Stenciling Fun: Add beautiful patterns to your cakes… quick and easy! Now you can learn to add stencilled accents to your buttercream or fondant cakes, cupcakes and cookies. During this class, students will work with both buttercream and rolled fondant and learn to work with the stencils.
